How to Create Your Own Healthy Cooking Recipes
Modern cook books can be very expensive, especially if they are specialized. There are cook books for vegetarian and vegan dishes, ethnic dishes, for people with celiac disease, diabetes, and other conditions. Fortunately, many of those favorite and enduring family recipes and those found in old cook books can very easily be altered into healthy cooking recipes. There are many good reasons for wanting and needing to adjust a recipe. Celiacs need to avoid modern and genetically altered wheat so prevalent in today's society. Diabetics must be careful with their intake of sugars. Some people need to lower their cholesterol, others need to lose or gain weight. Whatever the reason or motivation for avoiding certain foods or for desiring to include certain others, knowing how to properly substitute ingredients to create your own healthy cooking recipes is the answer. The good news is that there's often more than one substitute available for practically every ingredient required for the recipe.
What Is Spelt Flour?
Sadly, the United States is plagued with the widespread use of what is referred to as "wheat" flour. Many people assume they are eating healthy when they opt for whole wheat over white flour. However, the flour commonly referred to as "wheat," "durum wheat," "white flour," or even "whole wheat," is a genetically modified (hybridized) grain that is so dangerous it has caused many to suffer from celiac disease as well as other health problems, some of them very serious. What is worse is that many more people who haven't and never will be officially diagnosed with celiac disease are suffering from their consumption of this unnatural grain that has been referred to as a monster food or a "frankenfood." Truly healthy cooking recipes don't call for whole wheat flour, but rather for heirloom grains such as spelt and
kamut.
Grains from antiquity, in their unchanged state, should be employed in following healthy cooking recipes. They have fed man for thousands of years and offer as much as double the nutrition of genetically altered "foods." One of these grains was once consumed in the United States--spelt. During that time, cancer was practically unheard of. What are some of these truly all-natural grains? The name "spelt" is given to one of the world's oldest grains dating back to the days of Mesopotamia. It is
real wheat--the wheat mentioned in the Bible. It looks somewhat similar to modern "wheat" but is most nourishing to the body being significantly higher in nutrients. It also has a more pleasant taste in the opinion of those who have switched to it. Spelt is sold in either health food stores or in the health foods section of most grocery stores.
It can be used in place of wheat measurement for measurement. If the recipe calls for one cup of all-purpose or whole wheat flour, one cup of spelt flour can be used instead. Spelt absorbs slightly more water than modern "wheat," therefore, a small amount of extra liquid may be needed.
Cholesterol-Free
Healthy cooking recipes for cakes and pies almost always call for the use of eggs or egg substitutes. Unfortunately, egg substitutes tend to be quite expensive. Since it is the yolk of an egg that carries the cholesterol, it can simply be separated from the "white" or clear part. When the recipe calls for an egg, the egg whites of two eggs will perform in virtually the same way as one whole egg.
Preferably, eggs that come from cage-free chickens should be chosen. Some farmers even specify that the chickens that laid the eggs have not been habitually given antibiotics or hormones. These are the best and most natural eggs. They do tend to be more expensive; therefore, it should be kept in mind that even the use of "regular" egg whites will serve to greatly reduce cholesterol intake. Recipes for dishes such as cakes and loafs, pumpkin loaf, for example, can even take a mashed
ripe banana instead of an egg. This works beautifully.
Natural Sugars
When a recipe calls for white sugar such as those for
cookies; simply use dark brown sugar instead. It's sweeter so you'll probably want to slightly reduce the amount you use. Sweetened drinks such as iced tea and lemonaide can be sweetened with natural sugars such as honey or stevia. This is just the beginning of learning to alter unhealthy or traditional recipes to make them healthy cooking recipes.
