Some people would like to enjoy dishes made from recipes using ripe bananas; but, they don't believe that they can because of an intolerance of the fruit. Do they really have an intolerance or are they simply not eating bananas the right way? What is the "right way?" Bananas with plenty of brown spots all over them and thrown in the "practically give away" bin are in the best state they can be in. They are fully ripe, not rotten. Unfortunately, too many people think that bananas that look like this are to be thrown away when in fact they are the best to use in recipes using ripe bananas such as banana loaf and banana pudding.
The starchy state is what bananas are in when they have not fully ripened--being yellow with only a few small areas of green still showing doesn't mean they are ripe. When eaten while still in the starchy state, they can cause sickness and lead many people to mistakenly declare that they can't eat bananas because of an intolerance. Those who have learned this have given this fruit another try, alone as a healthy snack and by cooking with recipes using ripe bananas; they were thrilled to discover that they didn't have an intolerance to the fruit after all.
Unfortunately, much of the knowledge that past generations had about diet and nutrition has been lost and has to be re-learned, but it's worth it. All too often, many people who thought they had a food allergy or intolerance came to learn that the problem was really with how the food was being eaten or prepared. Recipes using ripe bananas are usually easy to prepare and are economical. Bananas that are considered past their prime are usually purchased for less than half of what the "good" ones sell for. Once peeled, there are usually very few spots that have to be cut away and they mash much easier than bananas that aren't as ripe as they should be.
Although banana loaf is probably one of the most popular recipes using this fruit, a simple fruit salad containing ripe bananas is a great way to increase intake of natural potassium. Again, although following the many rules of the "art" of food combining aren't necessary for good health, mixing many different fruits together is not necessarily healthy either. Ripe bananas combine very well with strawberries, fresh or dried coconut, pineapple, cherries, ripe pears, apples, and raspberries.
