The following healthy peanut butter cookie recipe is one that I've followed with excellent results. All but 1 of the ingredients should be well known to those who do any cooking from scratch. I'll briefly explain the health reasons for choosing these 9 ingredients. They are:
1. 1/3 cup butter - Don't use margarine. Some of the most respected proponents of healthy eating recommend cooking with only 3 fats: olive oil, butter or pure lard, not Crisco. Obviously, you don't wan to use olive oil in cookies because of its flavor, nor would you want to use lard because of its lack of flavor. Butter is the only choice unless you cannot handle any dairy products.
2. 1/2 cup of natural peanut butter - It should not contain any hydrogenated fats or added sugar and this should be clearly indicated on the label. You should be able to see oil sitting on top as it separates in natural peanut butter. Smucker's makes creamy and chunky varieties.
3. 1 cup of dark brown sugar - White sugar is void of any nutrition. At least brown sugar is still covered with natural molasses which does contain traces of nutrients. Traditional recipes call for 1/2 cup of granulated sugar and 1/2 cup of brown sugar. An entire cup of brown sugar works perfectly and makes delicious cookies that satisfy even the sweetest tooth.
4. 1/2 teaspoon baking soda
5. 1/2 teaspoon of baking powder - Be sure to use only aluminum free baking powder. They are sold in the average grocery store. Argo makes one that is double acting.
6. 2 egg whites - Avoid the cholesterol of using a whole egg.
7. 1/2 teaspoon of vanilla extract - Use only pure vanilla extract. It doesn't have the chemicals or the sugar often found in imitation vanilla.
8. 1 1/4 cup Spelt flour - This is the ingredient that I mentioned would sound strange to most people. I won't repeat here the health dangers of consuming whole wheat as I've outlined them in detail in the article, "Is Whole Grain Wheat Healthy Or Not? A Biblical Perspective" Spelt flour can be purchased in health foods stores or in the health foods section of major grocery stores. Using spelt flour is a huge part of keeping the cookies healthy, so you don't want to dismiss the importance of this ingredient. Now for the actual procedure:
Beat the butter and natural peanut butter with an electric mixer on medium to high speed for about 30 seconds. Add the brown sugar, baking soda, and baking powder. Beat until all is well mixed. Next, add the egg whites and vanilla extract until combined. Finally, begin adding the spelt flour a little at a time. Add as much as you can using the mixer, but you may have to manually stir in some of the remaining flour.
Form a round ball of about 1 inch. These will bake into individual cookies. Flatten them on a cookie sheet using a fork making crisscross marks. Simply continue coating the fork with flour to prevent it from sticking to the dough. Bake in the oven on 375 degrees for 10 to 12 minutes. Using spelt flour in dishes requires them to cook/bake just a little longer than when using regular white (wheat) flour.
These cookies are very sweet although they're lower in sugar than traditional ones. Remember, the peanut butter didn't contain added sugar. They are lower in cholesterol due to the use of egg whites instead of a whole egg. They were not baked with baking powder that contains harmful aluminum. Healthy spelt flour was used instead of traditional wheat flour which is a hybrid and has been labeled as a "frankenfood" due to the many diseases, including cancer to which its consumption is linked.
