The fresh food section in supermarkets always looks colourful and vibrant. With more and more organic food and hybrid varieties of fruits and vegetables displayed enticingly, this section is probably where you resolve to eat better and feed your kids nutritious meals too. But once the refrigerator is stocked with the best quality vegetables and you find the most healthy, vegetable-laden recipe for dinner, the youngest members of the family will probably eye you with disapproval. Here are a few recipes that could win their approval and makes getting kids to eat vegetables a little easier.
Creamy soup served with crunchy bread. Soups are really nutritious as steamed vegetables contain more nutrients than fried ones. And including cream and pureed vegetables in your soup make it both healthier and tastier. And you can always serve them with a side of toasted brown garlic bread or some croutons for dipping. This is a great later afternoon snack as it would not fill them up too much for dinner.
Sautee an onion with two tablespoons of butter and add 1 can of chicken or vegetable stock and bring to a boil. After simmering it for about 15 minutes, puree this mixture. Return the mixture to the stove and add a can of pureed pumpkin or any vegetable of your choice. You can also add some aromatics and spices like a pinch of paprika or dried basil. Add some more stock as per the consistency you prefer. Let the mixture simmer for another 10 – 15 minutes. Finally add the whipping cream, and allow it to heat through but not boil. Season to taste. Serve with bread.

Good tips and recipe ideas for getting kids to eat vegetables. But, people should avoid hybrid vegetables and return to organically grown HEIRLOOM (unchanged) vegetables--and other foods.
