The Wonders of the Heirloom Grains Einkorn, Emmer, and Spelt Wheat
Modern Wheat: Not a Real Food at All
Many people become frustrated with trying to eat healthy when they end up just as sick, if not sicker from switching to what are supposed to be healthier foods such as whole wheat. What far too few realize is that modern "wheat" which has rightfully been labeled a frankenfood by many is a hybridized, unhealthy grain unworthy of being called wheat. It does not figure among the heirloom grains created by God for man's consumption and good health. What are some of the heirloom grains to which many people are now returning? They include, but are not limited to: einkorn, emmer wheat, spelt wheat, kamut, barley, millet (not just a bird food!), and quinoa.
Heirloom Grains Are Fascinating and Healthy Foods
Einkorn, emmer wheat, and spelt wheat have all existed and nourished man for milenia and no one in ancient times knew anything about such modern diseases such as Celiac disease! Einkorn is a very light and fluffy grain that makes wonderful pancakes and was a staple food in ancient Europe. It is said to be the grain eaten by the Ice man found by archaeologists. Although it's somewhat difficult to find even in health foods stores, it can be requested. Consumers can let merchants know what products they want and that if they can't get them at their establishment, they will move on. Einkorn can also be ordered.
Emmer wheat is still grown in remote areas of Turkey and Syria, but is difficult to obtain in the United States. Again, it can be requested or ordered. Spelt wheat is usually sold in true health foods stores and even in the health foods sections of most major grocery stores across the United States. Spelt wheat probably resembles modern durum "wheat" the most in appearance and behavior. However, there are some significant differences. For example, spelt wheat is lighter in texture and color than modern "wheat." It's also more water soluble so cooking with it does require the use of a little more water than when cooking with modern "wheat."
Why are some taking such an interest in these heirloom grains? They are returning to the market because more and more people are learning that God's grains do not have a gluten that harms the body leading to the development of Celiac disease as well as to a host of other diseases, including cancer. Heirloom grains are literally 3 to 5 times more nutritious than modern "wheat" also referred to as durum semolina. Heirloom grains, which have not had their genetic code altered by man in any way are considerably richer in vitamins, minerals, and protein. This makes sense when considering the root system of heirloom grains which is strong and deep compared to the root system of modern "wheat" which is shallow and relies on chemical fertilizers.
When making bread, spelt is generally a better choice over einkorn and emmer wheat. However, I really prefer the fluffiness and natural sweet flavor of other heirloom grains such as kamut wheat when it comes to dishes such as pancakes.
